Recipe: Salade Nicoise with Salmon

Sometimes, you just get tired of lettuce and yearn for something a bit “more.” The deconstructed Salade Nicoise meets that need. It is one of my favorite salads for that reason, and because all parts of it can be prepared in advance. Plus, salad makers with an artistic flair can have a lot of fun deciding how to present the ingredients to maximum effect. To earn the name “nicoise,” a dish must contain a few specific items: olives, garlic, French green beans, tomatoes, and anchovies (or tuna in oil). Artichokes and hard-boiled eggs are also characteristic of a salade nicoise, but just as I was assembling this one in front of a hungry audience I realized I had forgotten to boil the eggs…. So, no eggs this time around. However, the beauty of this salad is that you can improvise and make it with whatever you have on hand. I had a craving for broiled salmon, so substituted that for the tuna, and added corn off the cob and chick peas, just because. Three hungry people polished off this platter–but with some crusty bread on the side, it could feed four less ravenous eaters. The recipe below is a free-form one–the quantities of all the ingredients (and the ingredients themselves) can be adjusted as desired.

Salade Nicoise 2
Salade Nicoise with Salmon

1 filet of salmon, about 1 lb.
olive oil
salt and pepper
fresh lemon juice

2-3 ears of corn, husked, with silky threads removed
a couple handfuls of thin, French-style green beans, rinsed
6-8 small red potatoes, rinsed and scrubbed but not peeled, and cut into quarters
3 eggs (which I forgot)

1-2 ripe tomatoes, diced
nice black olives, about 1/3 c. (I had Kalamata on hand, but Nicoise or other French olives would be more traditional)
cooked chickpeas, about 1/2 c.
8-10 canned/tinned artichoke hearts

your favorite garlicky vinaigrette

Preparation

1. Set oven to broil. Pat the salmon dry and place on a rimmed cookie sheet sprayed with cooking spray. Rub the salmon with olive oil, sprinkle with salt and pepper, drizzle lightly with lemon juice, and broil a couple minutes on each side, or until cooked through. Remove from oven and let cool, then cut into chunks.
2. Meanwhile, bring a large pot of water to a boil. Drop the corn cobs and green beans into the pot, and cook 5-8 minutes or just until tender. Using a slotted spoon, remove the vegetables from the pot and place them in a colander set on a dinner plate. Take the colander to the sink, rinse the vegetables in cold water, and set them aside. Keep the water in the pot boiling.
3. Drop the quartered red potatoes into the boiling water and cook until tender; remove them from the pot with a slotted spoon and set aside to cool. Finally, gently lower the eggs into the boiling water, turn off the heat, cover the pan, and let the eggs cook for 10-12 minutes. Remove the eggs and place them in cold water to cool, then peel and quarter them.
4. Take a cooked corn cob and stand it on its end on a stable cutting board. Carefully cut the corn off the cob in vertical strips with a sharp knife. If the green beans remain wet, pat them dry.
5. Assemble the salade nicoise by placing all the ingredients (including the tomatoes, olives, chickpeas, and artichokes) in an alternating pattern on a large platter. Drizzle lightly with the vinaigrette, and serve with additional vinaigrette on the side.

Recipe: Savory Baked Salmon

Nine times out of ten when deciding how to prepare fish, I opt for lightly marinaded or seasoned fish that is then broiled or grilled — a fresh and simple preparation.  It is a choice that makes me feel virtuous and happy (because, of course, a wise dinner decision opens up all sorts of possibilities for dessert).  But sometimes I find myself yearning for a slightly heartier fish dish that warms the soul in a different way. I don’t pretend this Savory Salmon is light, but it is good–the topping would work on almost any fish. And children like it. I serve it with oven-roasted asparagus and a cucumber-tomato salad.

Savory Baked Salmon
Serves 6

2.5 lb. salmon (or other fish) fillets
salt and pepper

Topping
1/2 c. mayonnaise
2 tbsp. fresh lemon juice
2 tsp. paprika
sprinkle crushed red pepper (chilli flakes)–roughly 1/4. tsp. , or tiny pinch cayenne pepper
1 tbsp. finely chopped fresh parsley (or 1.5 tsp. parsley flakes)
3 tbsp. grated Parmesan cheese or Pecorino Romano cheese

Preparation

1. For Topping: Combine mayonnaise and lemon juice and stir until smooth; add remaining ingredients and mix well to combine.
2. For Salmon: Sprinkle each fillet with salt and pepper, then generously coat each fillet with topping. Bake at 400 degrees for about 20-30 minutes, or until salmon is cooked through and flakes easily. If topping is not golden, broil briefly, keeping a careful eye on the fish.

Recipe: Orange-Ginger Salmon with Ramen Cabbage Salad

Ramen noodles don’t frequently appear on our dinner menus, but this salad is the reason my children started eating salmon.  With cooked ramen noodles, cabbage, carrots, and cilantro (from the herb garden) in a light orange-honey dressing, it has been a family favorite for years. And since I only make this salad as an accompaniment to the salmon, the kids quickly came to appreciate the whole package. It also helps that the two parts of this meal (adapted from an old Redbook magazine recipe) look so nice together.

Orange Ginger Salmon with Ramen Cabbage Salad
Serves 5-6

Marinade
1/2 c. soy sauce
1/4 c. orange juice
3 tbsp. honey
1 heaping tsp. ground ginger, or 1.5 tbsp. freshly grated ginger

2 lb. salmon fillets
3 (3-oz.) packages Oriental-flavored ramen noodles, broken into halves
1 (1o-oz.) bag grated carrots (about 4 c.)
1 (1o-oz.) bag shredded red cabbage (about 4 c.)
1/4 c. packed chopped cilantro

Dressing
3/4 c. orange juice
6 tbsp. extra virgin olive oil
1 tbsp. sesame oil
2 seasoning packets from the ramen noodles

Combine marinade ingredients in glass 9×13 baking dish. Place salmon fillets in dish and let marinate while preparing the salad, turning salmon occasionally.

Combine dressing in ingredients in a large salad bowl, mix well, and add carrots and cabbage, tossing to coat. Cook noodles in boiling, unseasoned water for two minutes, drain, and rinse thoroughly with cold water. Shake the colander to remove excess water, set aside to drain further, then add to cabbage mixture and mix well.

Remove salmon from marinade and broil (or grill) about 5 minutes per side, basting with marinade. Place on platter. Just before serving, add cilantro to salad and combine. Serve salmon with salad.
